Jon Fishburn
I am a hobby sourdough bread baker who is aspiring to become a baker in a cottage or micro bakery. As an eye surgeon with a chemistry background, I love the bread science of the sourdough process. I enjoy working with my hands and creating delicious sourdough loaves using a rather scientific mindset. More art and intuition than recipe following, baking is a wonderful blend of skills that I hope to continue honing through my course work at the San Francisco Baking institute.
